Trüffel- und Morchel-Velouté

Bei Morcheln geht es sowohl um Textur als auch um Geschmack. Bei der Trüffel- und Morchel-Velouté haben wir hauptsächlich daran gearbeitet, die hervorragende Textur dieser seltenen Pilze hervorzuheben, indem wir ihre Hüte in lange und dünne Scheiben geschnitten haben. Das Hinzufügen der schwarzen Sommertrüffel zu diesen Scheiben verleiht Ihren Geschmacksknospen ein neues Gefühl, indem sie die Weichheit der Morchel mit der Knusprigkeit der Trüffelhaut mischt. Sicherlich willst du mehr. Wir empfehlen es für gegrilltes Fleisch, feine Steaks oder Leberpastete, aber auch auf einer Bruschetta oder Focaccia kann es sehr gut genossen werden. Einfach dick und kräftig auftragen.

Morels are about both texture and taste. In the Truffle and Morel Velouté we have mostly worked to highlight the excellent texture of this rare mushrooms, by cutting their caps in long and thin slices. Adding the black summer truffles to these slices it makes a new feel for your taste buds, mixing the softness of the morel with the crunchiness of the truffles skin. Certainly you"ll want some more. We suggest using it for grilled meat, fine stakes or liver pate, but can be very much enjoyed on a bruschetta or focaccia as well. Just apply it thick and strong.
